Luis Anibal Calderón purchased the land that would become Finca Villa Betulia in 2005. Seven years later, he expanded his portfolio to include specialty varieties: notably 5,000 Geisha trees.

The benefits of specialty cultivation soon became apparent and prompted Luis to devote his entire farm to more delicate and rare varieties, including Pink Bourbon. Today, a range of specialty varieties prosper at Villa Betulia: along with Red, Pink and Yellow Geisha.

Selected and picked by hand, Luis pulped the cherries for this lot using a classic drum pulper before fermenting in tanks. After fermentation, Luis washed the parchment in clean water before laying out to sun dry on marquesinas.

An increasingly popular choice for innovative processing thanks to its high acidity, fruit-forward profile and refined body, Pink Bourbon was at first identified growing in and around Huila. Thought to be a hybrid of Yellow and Red Bourbon varieties, Pink Bourbon has since been revealed as neither and not a Bourbon at all. Currently undergoing research to determine its origin, “Pink Bourbon” traces to an Ethiopian landrace variety. Pink Bourbon includes the much-prized Geisha as part of its DNA.
